Banana & Apple Bread

Ingredients:

  • 1 and 1/2 cups of spelt flour

  • 1 cup almond meal

  • 2 medium ripe bananas + 1 for topping

  • 1 apple, chopped

  • 4 medjool dates, pitted

  • 2 tsp of baking powder

  • 2 tsp of bicarb soda

  • 2 tsp of cinnamon

  • 1 tbsp of chia seeds

  • 1 tbsp of almond butter

  • 1 & a 1/2 tbsp apple cider vinegar (AVC)

  • 1 & a 1/4 cup of plant mylk

Method:

  • Preheat oven to 190 degrees, line a loaf-shaped baking tin with baking paper

  • Place all dry ingredients, minus the walnuts into a food processor and mix.

  • Add banana and wet ingredients, minus the apple into the processor and mix until smooth

  • Add chopped apple and walnuts and mixed in.

  • Pour into lined baking tin and top with a banana sliced lengthways down the middle.

  • Place into the oven for 50 minutes to an hour — Check to see if it is cooked in the middle by prodding it with a knife or skewer.

  • Take out of the oven, allow to cool down before cutting.
