Banana & Apple Bread
Ingredients:
1 and 1/2 cups of spelt flour
1 cup almond meal
2 medium ripe bananas + 1 for topping
1 apple, chopped
4 medjool dates, pitted
2 tsp of baking powder
2 tsp of bicarb soda
2 tsp of cinnamon
1 tbsp of chia seeds
1 tbsp of almond butter
1 & a 1/2 tbsp apple cider vinegar (AVC)
1 & a 1/4 cup of plant mylk
Method:
Preheat oven to 190 degrees, line a loaf-shaped baking tin with baking paper
Place all dry ingredients, minus the walnuts into a food processor and mix.
Add banana and wet ingredients, minus the apple into the processor and mix until smooth
Add chopped apple and walnuts and mixed in.
Pour into lined baking tin and top with a banana sliced lengthways down the middle.
Place into the oven for 50 minutes to an hour — Check to see if it is cooked in the middle by prodding it with a knife or skewer.
Take out of the oven, allow to cool down before cutting.
