Nutty-Date Granola
Ingredients:
1 cup of rolled oats
1/2 cup buckwheat
1/2 cup cashews, roughly chopped
1/2 cup almonds, roughly chopped
1/4 cup walnuts, roughly chopped
2 tbsp chia seeds
2 tbsp hemp seeds
2 tbsp sesame seeds
2 tbsp pumpkin seeds
Couple cracks of pink or celtic salt
Date Paste:
7 juicy medjool dates, soaked in hot water for 10 minutes
1 tbsp almond butter — or any kind of nut butter you like/have
2-3 tbsp of water
Method:
Preheat oven to 180 degrees and line a baking tray with baking paper
Combine all dry ingredients into a bowl.
Make date paste by adding soaked dates, nut butter and water to a blender or nutribullet; blend until smooth (you may have to turn it off and scrape the sides a couple times)
Add date paste to dry ingredients and mix until combined.
Place onto baking tray and spread out evenly, put in the oven for 10 minutes, checking on it around the 7 minutes mark to make sure its not toasting too quickly.
Take out of oven, mix around with a spatula then place back in the oven for approx. 7 minutes or until golden.
Take out, let it cool down then store in a jar in the fridge
