Nutty-Date Granola

Ingredients:

  • 1 cup of rolled oats

  • 1/2 cup buckwheat

  • 1/2 cup cashews, roughly chopped

  • 1/2 cup almonds, roughly chopped

  • 1/4 cup walnuts, roughly chopped

  • 2 tbsp chia seeds

  • 2 tbsp hemp seeds

  • 2 tbsp sesame seeds

  • 2 tbsp pumpkin seeds

  • Couple cracks of pink or celtic salt

Date Paste:

  • 7 juicy medjool dates, soaked in hot water for 10 minutes

  • 1 tbsp almond butter — or any kind of nut butter you like/have

  • 2-3 tbsp of water


Method:

  • Preheat oven to 180 degrees and line a baking tray with baking paper

  • Combine all dry ingredients into a bowl.

  • Make date paste by adding soaked dates, nut butter and water to a blender or nutribullet; blend until smooth (you may have to turn it off and scrape the sides a couple times)

  • Add date paste to dry ingredients and mix until combined.

  • Place onto baking tray and spread out evenly, put in the oven for 10 minutes, checking on it around the 7 minutes mark to make sure its not toasting too quickly.

  • Take out of oven, mix around with a spatula then place back in the oven for approx. 7 minutes or until golden.

  • Take out, let it cool down then store in a jar in the fridge
