Golden Cashew & Oat Granola
It’s about time you add some spice to your breakfast — Golden, wholesome, and crunchy, what more could you possibly want…? Only a few ingredients that you should no doubt have in your pantry, and if you don’t then hurry up and get them because they’re a necessity! Don’t be afraid to get creative with this recipe as well, add different nuts, seeds etc, make it how YOU like it and enjoy!
INGREDIENTS:
DRY:
1 & 1/2c rolled oats
1c raw cashews, roughly chopped
1/4c chia seeds
1/3c pumpkin seeds
1-2 tsp turmeric powder + crack of black pepper
Pinch of salt
WET:
7 dates, pitted & soaked in hot water for approx. 10 minutes
1 heaped tbsp of nut butter of choice i.e. peanut butter, almond butter etc.
1/4c water; maybe more
METHOD:
Preheat the oven the 180 degrees celsius, and line a baking tray.
Combine all dry ingredients into a mixing bowl
Place dates, nut butter and water into a blender; blend until kind of smooth, this paste should still be fairly thick in consistency.
Fold in the Date and Nut Butter Paste to the dry ingredients, mix it all up!
Once all combined, pour and spread the mixture evenly onto the lined baking tray, place in the oven, stir occasionally (every 5-7 minutes) until golden!
